Todd English is known as much for his Boston swagger as he is for his down-to-earth, casually elegant cuisine. This former baseball player shares with VEGAS INC how he keeps hitting it out of the park at all his restaurants.
Describe your brand.
Accessible sophisticated elegance. It’s democratic. I like to cross lots of genres and use lots of different ingredients.
How does your experience as an athlete influence how you work in the kitchen?
Who says cooking isn’t a contact sport? It’s hot and sweaty and it takes long hours, commitment and dedication. It’s a challenge and it takes discipline.
What’s different about having a restaurant in Las Vegas than in other cities?
It’s part of the entertainment in Las Vegas. What I find interesting is people don’t necessarily ask their traveling friends: “Where did you gamble?” They ask: “Where did you go out to eat?”
If you could open a third restaurant in Las Vegas, what would it be?
I might go off the Strip. There’s still not enough out there for locals. I’d open something like Figs, my pizza restaurant in Boston. It’s pizza for big and little kids.
